Areas of Focus

 

The following outlines the areas of consultation that Luzon Station Consulting covers. Additional areas specific to each establishment are available upon request.  Please call 
us for a free evaluation and initial consultation. It is as important for you to feel as comfortable with us as we must feel with you.

*Establish acceptable staffing and payroll levels. Implement job descriptions to streamline your operation thus lowering both staff requirements and payroll expenses, maximizing profits.
                                                                                                                                
*Design an “original” menu in conjunction with the principles’ and Chef'(s)) desires, for both content and appearance. Consideration of such demographics as: your geographical location, cultural environment, population and type of eating establishments currently located in your vicinity.

*Design a theme and or interior décor that reflects the principals’ taste and wishes using our interior design team.                                                                                                                 

*Train kitchen, dining room, receiving and bar personnel. One inter-departmental training session will be held for the entire staff including such topics as service, presentation, sanitation, Do’s and Don’ts and inventory control and rotation. One departmental training session per department will be held for more specific department topics.                                                                              

*Design (drawings included) a kitchen around your needs with consideration of menu, traffic flow and possible expansion.                                                                                                          
                                                                                                                                   

*Design and implement policy and procedures for dining room, bar and kitchen, including security procedures to insure loss prevention, product and inventory control.                
                                                                                                                                     

*Provide suggested list of Food, Non-Food purveyors and Liquor Distributor information. Establish product specifications and delivery requirements.                                                        

*Establish inventory requirements and par stock levels for both food and beverage.
                                                                                                                                   

*Provide complete list including quantities needed for all glassware, silverware, plates, kitchen equipment, linen, incidentals, etc.  for full start-up.                                   

*10. Interview and recommend to the principals, qualified restaurant managers, Chefs, Bartenders
and other staff.                                                                                                             

*Make periodic evaluation of service, hospitality, quality of food and beverage and
general overall condition and operation of the establishment once a week for the first six weeks of
operation. A report of our findings and suggestions for changes and improvements if necessary will be presented to the principals’. Visits will occur both mid-week as well as weekend in order to fully
evaluate the dining experience.
